On receiving the scholarship I was overwhelmed with joy. Given the opportunity to gain new knowledge in this Industry, has always been an aspiration of mine and knowing that I was one out of many that was chosen ….is truly an honor and I am extremely thankful.
 
The first semester ended around November and we looked at Accommodation, Introduction to Tourism, English and Communication, First Aid and Sanitation and Safety. These courses really opened my eyes to the other aspects of the Hotel and Tourism Industry. We looked at the history of tourism, how it relates to the economy and how it affects us. As well as the health and sanitation side of it…and why it is extremely important to be hygienic and efficient when dealing with food and its preparation. I received grades of A’s and B+’s in these courses. I was able to explain to others the benefits of being hygienic and the repercussions of not following the guidelines enforced by the government and by the institution.
 
I am now in my second semester and I am studying Food Preparation and Food Service as well as Ethics and Citizenship and Management. I am able to prepare various types of vegetable cuts as well as fish cuts and the kitchen jargon (which we may hear on a day to day basis while interacting with team members from the kitchen) is now familiar. Being an operator, I am asked questions regularly and am expected to know the answers; even questions not directly related to my department are asked. Now with exposure to the various aspects of the Hotel Industry, I am equipped with the knowledge to answer these questions correctly as well as advice my colleagues of the correct answers. Classes such as Management and Ethics, have helped me to educate my colleagues regarding the wrongs and rights in the society as well as it has given me another perspective  in which to view circumstances, which we in the service industry are faced with daily when dealing with guest. A confidence has emerged in me and now I am able to speak publicly and get my point across. I am now looking to begin my end of semester exams and am hopeful to pass them as I did last semester.
