CORDELIA BANNISTER – CARIBBEAN FOUNDATION SCHOLAR
I am grateful to CHTAEF and the Caribbean Foundation from London for supporting me in my Modern Wedding Cake course at the Culinary Institute of America which was informative with the different variety of wedding cakes that are requested in current times.  The instructor that directed the course was helpful in showing us a selection of certain flowers and I was also able to benefit from the other members of the class with their ideas and experiences. We gained knowledge also on marketing cakes and how to advise and assist couples for their special day. I was delighted that I got to work with plenty of tools and gadgets that I was not familiar with before and this is something that will definitely benefit me and all those whom I work with.
 
Well from experience of the different cakes that we demonstrated at C.I.A. I already had to produce one of these cakes at work on the 6th June for Barbados Hilton's Anniversary. As you may not know we had to produce our own idea of a cake and illustrate it on styrofoam at school but we were put to the test (the two other team-mates at Hilton and myself), and we did remarkably well.
We produce a four tier (real) cake with brushing embroidery and some intricate details and the cake represented Hilton superbly.
 
I believe that this is only the beginning in the journey but I am excited to be able to produce good work for my employer and also to inspire those who work with me in showing them new and different techniques. The course gave me more confidence in myself and the exposure that I desired to reach higher. Thanking you the Foundation again for a wonderful experience and I look forward to completing my next course in at the CIA.
